A Stonehaven grandmother is hoping to take her world-first cold-smoked raw eggs to the next level in a new reality competition.

A Stonehaven grandmother is hoping to take her world-first cold-smoking method to the next level in a new reality competition.

The Smoked Egg Company owner Julie Kos pitched her innovative product, smoked raw eggs, on Gordon Ramsay’s Food Stars on Tuesday night, hosted by the culinary superstar as well as business mogul Janine Allis.

Ms Kos, 58, who also owns local egg farm Kossies Free Range Eggs, came up with the idea after buying a second-hand smoker with her husband for their 30th wedding anniversary.

The pair were smoking a variety of meats before Ms Kos attempted to smoke an egg.

“I wanted to know if I could smoke an egg and what it would taste like,” she said.

Ms Kos spent 12 months figuring out how to smoke an egg in its shell, without cooking it.

“Then I woke up one morning and I thought I had worked it out,” she said.

“I remembered we wash eggs in hot water because if you wash them in cold water, all the pores open up and impurities get it.”

The couple used the philosophy to get a smokey flavour into the egg, while keeping it raw.

“We’ve come up with the first-ever technology for chilled smoking,” Ms Kos said.

Clinical testing has shown the smoking process removes bacteria from the egg and stops the ageing process, increasing its shelf life to up to six months, she said..

Ms Kos said her experience on the show was “fantastic” and “very rewarding”.

“I’ve always looked up to Janine (Allis) but Gordon (Ramsay) blew me away,” she said.

“He is such a gentle giant.

Contestants on the show could win a $250,000 investment to expand their business.

Ms Kos said money would allow her to purchase new equipment to create a new product, such as liquid smoked eggs.

“It would enable to us to do some more research and development,” she said.

Gordon Ramsay’s Food Stars airs on Tuesday and Wednesday nights at 7.30pm on Channel 9.
