ONE of Adelaide’s most popular food trucks is building on its success.

Sneaky Pickle co-owners Amanda and Jeff Griffiths will open a restaurant of the same name next week, just off Goodwood Rd in Kings Park.

Since 2012, their food van — serving authentic US-style sandwiches and sides — has patrolled Adelaide’s streets.

Mr Griffiths says they wanted to open a bricks and mortar restaurant to move the business forward.

The truck became a bit unmanageable,” Mr Griffiths says.

“We’re restricted by what we can do and we’re only getting busier on the streets.

“We also wanted to offer a sit-down location because a lot of our food is great for night-time meals.”

Mr and Mrs Griffiths are regular travellers to the US, learning about authentic local cuisine.

Mr Griffiths says one ingredient in particular is undervalued in Australia.

“One of our biggest influence is the pickle,” he says.

“Pickles are neglected and no one here gets into them.

“It’s the palate cleanser.

“It’s the thing you can have before the meal, during the meal, in the meal and after the meal.”

As with their food truck — which, for now, will be taken off the streets — the restaurant’s menu will regularly change.

The restaurant opens on Thursday and will be open each Wednesday to Saturday between 5.30pm and 9.30pm.
