FOR Mark Barun, the art of roasting coffee beans and pouring the perfect cup is all about passion.

“I think all great coffee, or anything great for that matter, comes from passion,” Mr Barun says.

“If you don’t have passion for what you do then you shouldn’t be doing it in the first place.”

The co-owner of Sefton Park cafe The Coffee Barun, which opened its doors in 2007, has had a love for coffee from the moment it touched his tongue

“I spent three years roasting (coffee beans) in my garage and selling at markets in Pooraka and Gepps Cross and then decided to start up my own coffee roasters across the road from where The Coffee Barun is today.”

The Coffee Barun supplies ethically-traded beans to 28 eateries across SA, with crop quality and availability determining the flavour of the month.

“At the moment we’ve got a great relationship with Colombian farmers and lovely coffee from India and Ethiopia,” Mr Barun says.

“I love exploring new coffees and the fact that customers can come and have a different coffee from a different region every time they visit.”

The Coffee Barun picked up 30 per cent of 2700 votes cast for the city and fringes poll, a clear winner ahead of Hutt St’s Coffylosophy (16 per cent) and La Moka on Peel St (10 per cent).

“It’s so amazing that we’ve been recognised as a favourite place for coffee,” Mr Barun says.

“We have a great bunch of staff who we have great relationships with so this is ultimately their win, not mine.”

JUST like a great coffee, Kent Town cafe Tell Henry is going strong.

Fresh off a win at the inaugural Eastside Business Awards, the cafe’s coffee has come out on top of a Messenger Community News poll to find the best cuppa in the region.

Tell Henry, which derives its name from the Bob Dylan song Don’t Ya Tell Henry, is the brainchild of owners Brad Bonar and his partner Sharon Mackay.

Mr Bonar, a Canadian who has lived in Australia for the past 15 years, says he appreciates the support of his customers.

“About 80 to 90 per cent of the people who come to our shop are regulars,” Mr Bonar says. “We like to provide lots of different ways to have coffee, with a lot of ours being a double-shot ristretto.

“And we use Tweedvale Milk, which is a local company. We are very proud of our team and appreciate the support. It’s like a coffee community here.”

The couple now has a second Tell Henry cafe on Gilbert St in the city.

Loyal customer Katherine MacDonald said she loved the cafe because the staff “really take care of their coffee so they get each cup is just right”.

“They take the time with each order and all the staff are really lovely and genuinely enjoy meeting and talking to their customers,” she said.

CAFE Zitto owner Rob Terry says he will shout lunch for his “terrific staff” after hearing the Golden Grove coffee shop was voted the north’s most popular coffee spot.

Mr Terry says he is over the moon to discover his business is now rated the northeast’s best after starting out in 2014.

“We are very excited to have won this,” he says.

“Looks like I’ll be shouting my staff a lot of lunches, which I promised I’d do if we won.

“It’s really all about my terrific staff, that’s the important thing.

“They do a great job.”

The win comes at just the right time with Mr Terry saying he is months away from opening a new outlet at Tea Tree Plaza’s new $235m development.

“We’re really excited about that, being included in the new dining precinct,” he says.

Dee Dee’s Cafe is going strong, with the Morphett Vale cafe winning top spot in our best coffee poll for the south.

Cafe owner Debbie Delderfield said learning her Main South Rd business, which she runs with her family, had taken out the title was “fabulous”.

“We are a small business that has only been open like two years so it is a great (acknowledgment) that everything is being rewarded,” Mrs Delderfield said.

Mrs Delderfield thanked her loyal customer base that has been with them from the beginning.

“They are wonderful,” she said.

But what goes in to making the perfect cup of coffee?

Mrs Delderfield says it is all in the consistency.

“You pick a good bean and you make sure that everyone makes it exactly the same every single time with good quality milk and good quality service,” she says.

“We have three different beans and I think that is why we are so popular, because you can get a choice of what sort of strength you want.

“(We have) extra dark, medium and mild beans … it gives you a good range of flavours.”

And the most popular order?

“A medium roast is the most popular but people who like the strong one come just for that as well,” Mrs Delderfield says.

“We sell everything, white mochas, caramel and all-flavoured lattes, anything you can think of.”

A GOOD coffee is more than using the best product with the best techniques, Sublime Coffee Roasters co-owner Sam McKay says.

“The barista needs to be a genuine person,” Mr McKay says. “They’re like the conduit between the person walking in and what’s inside the coffee grinder.”

Mr McKay, who owns the cafe with Dan Horrell, say their commitment to customers is part of what makes the experience ‘sublime’, alongside their in-house roasted coffee beans and loyal “shop dog” Pilot, who is ready to greet all customers.
