The city cafe well known for their eggs is Seoul Sisters, tucked away on Halifax Street.

Owner and chef Chung Jae Lee said one of their most popular dishes is the Chilli Prawns, which consists of a bed of coconut rice topped with scrambled eggs, mushrooms and prawns.

“I wanted to add something with an Asian style to the breakfast menu, I was looking for something that mixed Asian style with Western style,” Chung Jae said.

“There was nothing that had that in-between everywhere I went for breakfast, I wanted something spicy and I wanted nice and soft eggs, and instead of salmon, prawns would be better.”

The dish is made by cooking the prawns first in chilli and soy sauce, adding the eggs, then the veg.

The Chilli Prawns are ever popular at Seoul Sisters, but the cafe do offer some old eggy favourites such as eggs Benedict, smashed avo and an egg and bacon burger.

Chung Jae said the secret to their soft and delicious egg offerings on the menu are getting the eggs fresh every day.

“The best egg advice I have is for the eggs to be fresh, to make poached eggs a nice shape, they must be fresh,” Chung Jae said.

“Otherwise, the eggs might come out ugly … it depends on whether you want an ugly or pretty egg.”
