A famed Italian-Australian chef has brought his ‘3-slice’ rated pizza to Sydney - and even more surprising than the claim he offer’s the city’s best is where you can try it.

A Rooty Hill restaurant might just be home to Sydney’s best pizza. That’s the claim coming from famed Italian/Australian chef Stefano Manfredi, who owns PizzAperta at West HQ.

In the past Manfredi, who previously operated PizzAperta Manfredi at The Star, has been awarded the coveted 3 slices from prestigious Italian publishing company Gambero Rosso’s annual Italian food guide, Pizzerie d’Italia. There have been only a handful of restaurants outside of Italy to achieve this honour.

The chef, known in Australia as the Godfather of modern Italian cuisine, is bringing that same expertise to Rooty Hill.

Manfredi believes what makes his pizza one of a kind is the stone mill flour he uses, which has been imported from Italy for the first time ever.

“I’ve used my background as a high-end chef to bring a quality eye to the pizza base,” he said.

“To me, that’s the most important part of the pizza.”

Not only does the stone-mill flour add more flavour with essential oils, Manfredi’s dough is rested for 48 hours before it becomes a pizza.

His recently launched Manfredi truffle pizza has become an instant bestseller and last week, over 1000 were made.

Manfredi, who was born in Italy but went to high school in Blacktown, said the area was starting to come into its own as a foodie destination.

“Patrons want quality and that’s what we have to give them,” he said.

The menu at the venue changes seasonally.

To mark truffle season, Manfredi has purchased some of the best in Australia for $2000 a kilo. This is on top of the white truffles he introduced to the menu in December that cost a pricey $8000 a kilo.

Manfredi celebrated the success of the business with an event last week, with his daughter, Isabella Manfredi. Rockers The Preatures were in attendance.
