Traditional Neapolitan pizza, Middle Eastern tagines and handmade tacos are on the menu at The Advertiser’s L Plates cooking classes

From perfectly puffed pizza to exotic spiced tagines, the world is a smorgasbord of inspiration for the budding cook.

And while it mightn’t be the easiest time to travel abroad, learning to cook traditional cuisines is the perfect way to get a taste of any destination.

Take that pizza, which Napoli-born pizzaiolo Ettore Bertonati re-creates at his Madre restaurant in Adelaide.

His know-how has attracted a legion of fans not only locally, but also from interstate.

Now, the award-winning “pizza tosser” is joining a group of top SA chefs sharing their skills in a series of hands-on cooking classes as part of Tasting Australia this month.

“I will show people how to start a ‘mother’ sourdough starter, and how to make pizza at home,” says Ettore. “The recipe will be a little bit different from the one I use in the shop because … the temperature of the oven in the restaurant is 400-450C; instead most ovens reach a temperature of 250C. So we will add something to get the crunch. But still the dough will be fermented for 24 hours.”

Also among The Advertiser and delicious.SA’s L Plates classes at TAFE Regency is Daniella Guevara’s Let’s Taco ’Bout It, and Huda Al Sultan’s Middle Eastern feast.

Huda will reveal her recipe for the kofta in tahini sauce that won her a spot in the top 24 of MasterChef Australia in 2019, a vegan version and sides.

“It will be a taste of the Levant area,” says Huda. “We like saucy dishes to dig into with bread, and for sharing.”

Among the spices and herbs in Huda’s toolkit are dried mint, pomegranate molasses, capsicum paste and tahini.

“When you eat, it’s a bang in your mouth – it’s not just salt and pepper or just one flavour,” says Huda. “There are layers of flavour from the beginning to the end.”

The three-hour L Plates classes cost $85 and are held in small groups, allowing for one-on-one time with the experts. For the full list, see tastingaustralia.com.au
