Outback Prairie Hotel comes to Adelaide with camel burgers, kangaroo parmigiana and emu liver pate

Care to try a camel burger? How about a kangaroo parmigiana? South Australia’s iconic Prairie Hotel in Parachilna has popped up in North Adelaide, giving locals a chance to taste its famous feral meat offering.

CITY slickers can go feral at North Adelaide’s newest dining destination.

Prairie Hotel – the iconic pub of South Australian outback town Parachilna – has popped up in O’Connell St with its famous feral meat menu, including camel burgers, kangaroo parmigiana and emu liver pate.

“The burgers are popular,” says Jane Fargher, who runs the hotel with her husband, Ross. “And for dine-in, the kangaroo parma, feral mixed grill and goat curry. People are interested in trying something new.”

Prairie on O’Connell is helping keep the Prairie name alive while the historic pub remains closed as a result of COVID-19 restrictions.

While the State Government’s capacity limits have eased, the pub’s design meant it would be limited to 29 patrons at any one time.

“With a town of a population of three, and relying predominantly on travellers, COVID has really meant there was no option for us to create an innovative pop-up in Parachilna – it just wouldn’t have worked,” Mrs Fargher said.

Adelaide isn’t unmarked territory for the Farghers, having operated pop-ups at Adelaide Festival, WOMADelaide and Tasting Australia in previous years.

But the current venture in North Adelaide will be the family’s longest city stint.

“We’ve loosely said we’re migrating our team to the south for the winter,” Ms Fargher said.

For less-than-game diners, the pub also puts a twist on more conventional pub fare, such as bush tomato margherita pizza and wattleseed s’mores. Diners can also book in for a three-course chef’s menu, which includes a glass of Flinders Ranges wine or the family-made Fargher Lager on arrival.

Fatema Sitabkhan, 28, was pleasantly surprised by the taste of the camel burger.

“It was succulent and juicy and the fillings all provided a really good balance,” she said.

“But it’s huge.”
