Hummus. It makes the world go ’round.

At least it does for lovers of the Middle Eastern dish, best devoured as a dip or lathered on flatbread, falafel or, well, anything.

The recipe is simple: chickpeas, tahini, lemon, garlic and a little spice. Get the balance right, and you’ve got yourself a crowd pleaser (and healthy snack for days).

Locals David Porcaro and Christina Adamczyk cottoned onto the trend a few years back, launching a pop-up business dedicated to the stuff. Now, their baby – Hubba Hubba Hummus – is all grown up into a bricks-and-mortar destination, at the University of Adelaide’s Schulz Building, thanks to behind-the-scenes help from Renew Adelaide.

and pomegranate, Moroccan mushroom and an Italian-inspired ragu. There are also falafel wraps, the popular Israeli street food sandwich called sabich, and a twist on city lunch faves – think ham and cheese toasties with harissa butter.

And if you really want to mix things up, you can wash it down with an oat milk tahini shake.

For Christina and David, who previously ran the Delectaballs food truck, it’s food made with intention.

“We always use the mantra, spread hummus, not hate,” Christina says. “Hummus is about love and sharing and bringing people together.”

The pair are also spreading the love at Gluttony during the Adelaide Fringe, and will be at WOMADelaide March 6-9.

Some of our other top spots for the good stuff

1. The Middle Store

Whatever you get, get it with hummus. Rose Adam’s mum is behind the hummus, here, whipping up the mixture from scratch – that means dried, not tinned, chickpeas. They’ve opted against garlic – so you can kiss your date afterwards. Note: catch Rose on this year’s MasterChef Back To Win.

2. Real Falafel

If you’re after a cheap eat while shopping for your groceries, head to Mitch Aldawsari’s stall for a falafel wrap or bowl with ALL the hummus. You can even buy a tub of it to take home for later (or devour in the car).

3. Part Time Lover

If there’s a cult fave match for hummus, it’s haloumi. This (newish) city restaurant combines the two on a pretty plate, finished with pickled onion and dukkah. Delicious washed down with a glass of Adelaide Hills chardonnay.
