We know you Aussies love an easy recipe.
And we also know how some cheesecakes can involve a fairly detailed process – hello, gelatine and an abundance of ingredients. So, that’s where our recipe creator, Liz Macri – long-winded-recipes-made-shorter-queen – stepped in.
She was the woman for the job, given she is known for her 4-ingredient condensed milk truffles, and one of our most famous recipes of all time, this lemon and passionfruit condensed milk slice.
What’s more, she’s knowledgeable about all things condensed milk (as you can tell from those delights above), so it was no surprise that she could create such a simple, straightforward winner. If detailed cheesecakes were an algebra formula to crack, Liz was the woman to simplify and master. And voila, the problem was solved with this three-ingredient recipe.
Meet the 3-ingredient condensed milk cheesecake
Arnott’s Granita biscuits, sweetened condensed milk, cream cheese. Three beautiful ingredients in this cheesecake masterpiece. That’s it.
We’ll explain – this recipe essentially consists of an Arnott’s Granita biscuit base, with condensed milk stirred through it, and on top, a luscious cream cheese filling that also has sweetened condensed milk through it. It’s a condensed milk paradise.
How to make a 3-ingredient cheesecake
The condensed milk is the secret to the success of this recipe. After crushing your granita biscuits in a food processor, you add a bit of the condensed milk for sweetness. The rest of the condensed milk is whipped with cream cheese to make a creamy, fluffy cheesecake filling.
After layering them in a springform pan, simply bake for 40 minutes until the cheesecake is firm to touch but still has a bit of wobble to the centre.
Create a decadent cake out of just three ingredients! Granita biscuits are not too sweet and offer a great balance to the sweetness of condensed milk. If you’d like to add some flavouring, simply add 1.5 tablespoons of vanilla…
What does this cheesecake taste like?
While the condensed milk brings that beautiful sweetness, the Granita biscuits perfectly offset it with their subtle flavour.
What’s more, you can sprinkle in your own flavour preferences. Lover of vanilla? Stir some vanilla extract through the cream cheese mixture. Instead you might want a little bit of zesty freshness? Add some lemon or orange rind to the mixture if you’d like, too.
How do I make sure my cream cheese mixture is smooth?
Good question. No one loves a lump. Our expert tip – remove the cream cheese from the fridge a few hours beforehand to bring it to room temperature. It helps make the filling smooth. Wayoooo. Game changing.
How do I stop my cheesecake base from cracking?
We’ve all been there. Once you’ve finished up baking your cake, leave it in the oven with the door ajar until it’s cooled completely. This will give it time to rest and set, before you place it in the fridge for six hours (yes, but good things come to those who wait) to do the final setting job.
