My Smoko Break: Special Anzac treat

THESE Anzac muffins take less than half an hour to make. As you can see below, it is extremely simple measurement-wise and tasty for morning tea.

THESE Anzac muffins take less than half an hour to make. As you can see below, it is extremely simple measurement-wise and tasty for morning tea.

What you need

1 cup self raising flour

1 cup soft brown sugar

1 teaspoon of ground cinnamon

1 cup coconut

1 cup rolled oats

1 egg

1 cup milk

1 grated Granny Smith apple

Method

Combine flour, sugar and cinnamon. Stir in oats and coconut. Make a well in the centre and pour in apple and milk mixed together.

Mix until combined, with a wooden spoon — no need for an electric mixer.

Spoon into sprayed muffin tins, or lined muffin tins, filling until nearly full.

Combine two tablespoons of coconut, two tablespoons of rolled oats, two tablespoons of brown sugar and mix together.

Sprinkle with your fingers on the top before baking.

Bake at 200 degrees for 20 minutes.

TIP OF THE WEEK

TO STOP the topping on the Anzac muffins from being soggy the next day, put a few Saltine crackers in with the muffins when you store them, to absorb moisture.

This also works to keep crunchy biscuits from becoming soft.
