KS7 launches world's first ultra-premium marbled lamb brand

The humble lamb chop has had a makeover thanks to one Australian farmer, and he’s just launched the first 7 per cent marbling brand in the world.

A bold new entrant is set to shake up the red meat industry, with the launch of the world’s first 7 per cent marbling lamb brand.

The brainchild of Holbrook NSW-based ram breeder Tom Bull, KS7 will soon feature on top-tier restaurant menus alongside premium Wagyu offerings. While the genetics have been in development for years, recent advancements in technology have enabled the identification of lambs with 7 per cent intramuscular fat.

Mr Bull is no stranger to pushing boundaries in lamb marketing. Three years ago, he made headlines when cutlets from his Hampshire Downs-sired lambs were selling for $99.60/kilogram in Sydney.

Now, KS7 aims to take lamb into new territory: the ultra-premium segment traditionally dominated by high-end beef.

“In a world dominated by premium beef on menus, our brand KS7 is lamb’s first foray into the uber premium meat market,” Mr Bull said.

The payoff for producers is significant — lambs that meet the marbling standard can attract up to $1 more per kilogram. At export weights, that could mean an extra $35 per head.

The brand will be supplied by Mr Bull’s clients, many of whom have been selectively breeding for high marbling, focusing on intramuscular fat traits. Some flocks have recorded up to 50–60 per cent of their lamb drop meeting KS7’s stringent specifications.

The first cuts of KS7 lamb have already been processed and boxed, with Mr Bull confirming the product will begin as menu specials until supply becomes consistent.

He said processors were increasingly offering premiums for lambs that met marbling thresholds — but KS7, he added, would deliver the most marbled lamb on the market.
