Delicious Produce Awards: Sheep’s cheese on short list

PECORA Dairy, in the southern highlands of NSW, has been named as a state fin­alist in the prestigious Del­icious Produce Awards.

The sheep dairy is a finalist in the “From the Dairy” section for NSW, along with Burraduc Buffalo Mozzarella, Cheese Loves You Velvet Chausette, Country Valley Natural Yoghurt, Nimbin Valley Dairy Sainte Billie, The Pines Kiama Non-Homogenised Milk and The Little Big Dairy Co Single Source Double Cream.

Pecora Dairy, at Robertson, was launched in 2011 and makes dairy products from East Friesian sheep.

Its products include Bloomy White Cheese, Jamberoo Mountain Blue and Mezza cheese and yoghurt.

Cressida McNamara of Pecora Dairy gained approval from the NSW Food Authority to produce raw milk cheese.

“Cheese is a way of preserving milk,” Ms McNamara said.

“When making cheese from raw milk it’s a process of killing the bugs and allowing good bugs to proliferate.

“Cheese making is a balance of art and science, it’s important to have a full understanding of that so people can consume them safely.”

In Victoria the finalists include: Holy Goat Cheese Nectar Tomme, How Now Dairy Happy Cow Kind Milk, King Valley Dairy Cultured Butter Sheets, Meredith Dairy Cultured Goat Milk, Schulz Organic Farms Organic Full Cream Milk, Shaw River Buffalo Cheese Annie Baxter Special Reserve, St David Dairy Pure Pouring Cream and The Fermentary Milk Kefir.
