One man has died at Buchan in East Gippsland as a result of the fires, while at least four people remain unaccounted for, according to emergency services.
Ten areas in Victoria's east are still under a 'watch and act' alert, as 47 fires continue to burn across the state.
Around 675,600 hectares of land are affected by fire in East Gippsland and near Corryong on the NSW border.
Hot weather is on the way for East Gippsland again this week. Temperatures up to 41 degrees are expected in Orbost and Mallacoota on Saturday, while it is set to reach 39 degrees in Lakes Entrance and Bairnsdale.
The state's east will also be plagued by a strong wind change on Saturday afternoon, which could alter the activity of out-of-control fires.
The Princes Highway has been reopened to traffic between Bairnsdale and Orbost in both directions, the Transport Department says, but it remains closed from Orbost to the New South Wales border.
The large humanitarian ship, HMAS Choules, sailed from Sydney on Wednesday morning and is expected to be off the coast in the vicinity of Mallacoota by mid-morning on Thursday.
The threat level of an out-of-control bushfire that has burned through 1000 hectares north-east of Portland has been downgraded to 'watch and act'.
