Dark Mofo Winter Feast: From mutton birds to doughnuts … The full list of stalls

There are some new stalls and some old favourites at this year’s Winter Feast offering everything from mutton bird to doughnuts. SEE THE FULL LIST >>>

THE red curtains are up, the ceiling is adorned with gold frill and neon red crosses and the candles are ready to be lit for the first night of Dark Mofo Winter Feast.

Organisers put the final touches on decorations for the popular event at Princes Wharf 1 on Tuesday, as they hope to transport revellers to ancient Rome for a celebration worthy of the gods.

This year’s theme is Saturnalia, a festival for the ancient Roman god of seed, Saturn.

“A number of stall holders have taken inspiration from Saturnalia … which is an ancient Roman feasting tradition,” food curator Amanda Vallis said.

“Stall holders really take Winter Feast as the opportunity to do something different and out of the ordinary.

“Stallholders tend to experiment with ingredients they haven’t worked with before.”

There are 82 stallholders from across the state showing off their best Dark Mofo themed food and drinks at the feast.

“We’re lucky to have cuisines represented from all over the world,” Ms Vallis said.

“Outside, there’s an incredible array of stalls, we’ve got whisky distilleries out there, food producers, and also wine offerings.”

Ms Vallis said of the unique offerings, she was most excited about Tasmanian Aboriginal stall, palawa kipli.

“They’re going to be serving up half mutton bird with a beautiful side salad and flat bread,” she said.

“Mutton birding is an incredible tradition for Tasmanian Aboriginal people so I feel very fortunate we’re able to showcase that tradition.”

Winter Feast project manager Rosie Dowie said planning for the event had been in the works for five months.

Ms Dowie warned the event would be popular.

“There are a lot of people in Hobart at the moment and this is a bit of a favourite,” Ms Dowie said.

“We have a capacity limit of 7000 for this event we anticipate throughout the night up to 15,000 people coming through the doors.

“We’re still encouraging social distancing and wearing a mask.”

One of the stallholders is Jack Lark, the son of renowned whisky distiller Bill Lark. Lark Jr will debut his spirits at his stall, Local Absinthe.

“We’ll be serving our Tasmanian absinthe, we have absinthe seltzer cans, we’re doing a range of cocktails and sale by the bottle,” Mr Lark said.

Mr Lark said he was excited to debut at an event such as Winter Feast.

“This will be our first proper public outing for our absinthe,” Mr Lark said.

“I really wanted to get our brand out there so I’m grateful they’ve let a new company like us work Winter Feast.”

It’s also the first time for Smithton based Venezuelan style cheese producer, La Cantara cheeses.

“We’re going to have four different options on our menu, we’ll be showcasing our cheese in every single one of them,” owner Genaro Velasquez said.

“It’s nerve racking but at the same time it’s quite exciting to be part of such an exciting event.”

And returning to Winter Feast is popular Lady Hester, with tempting sourdough doughnuts prepared by co-owners and sisters Loren and Erin Clarke.

Lady Hester has been absent from Hobart menus in the past six weeks after closing its Battery Point store and cutting back on its market stalls.

But Loren Clarke said Lady Hester had been a fixture at Dark Mofo Winter Feast for several years and they were eager to keep the tradition alive.

One of their signature treats this week will be a dark chocolate Tasmanian whisky ganache doughnut with smoked salt sprinkled on top.
