When Hobart’s most popular bagel shop closed last year, two of its bakers hatched a plan to open a new business on the Bathurst St site and continue serving bready treats to their loyal customers.

Bury Me Standing, which developed a rabid following over the course of a decade, closed in December after owners, Alesha Peckels and Cohen Bassingthwaighte, moved to Cairns where they are now running a new bagel business under the same name.

Back at the original Hobart site, Rahul K C and Ramij Raj Panday, who used to work as bakers for Ms Peckels and Mr Bassingthwaighte, have opened a new shop, Bathurst St Bagels.

The Nepal-born Mr K C said he had also worked front of house at Bury Me Standing and knew how to manage the day-to-day operations of a business.

He moved to Australia in 2019, settling in Sydney before relocating to Tasmania in 2022.

“I used to work as a sandwich maker in Dubai, around 2015-16,” he said.

“I always liked thinking about owning a business.”

Mr Panday was a baker at Bury Me Standing for more than three years, so customers of the new business can expect familiar offerings at Bathurst St Bagels.

Mr K C said the shop would serve a variety of vegan bagels but would also have a range of non-vegetarian options.

“We decided to do [bagels] with salmon, bacon and eggs, smashed avocado, and beetroot hummus,” he said.

Bathurst St Bagels officially opens its doors on Friday, March 1. It will be open from Wednesday to Saturday from 7.30am – 2pm, while on Sundays its hours will be 8am – 1.30pm.

Mr K C said the shop would also be serving coffee.

“It’s always good to have a hot coffee with a bagel,” he said.

Bathurst St Bagels is located at 83-85 Bathurst St.
