Summer Kitchen Organic Bakery, 21 Marguerite St, Ranelagh

This Huon Valley bakery has taken his own twist on the traditional pastry, rebelling against the strict criteria of what makes a pasty Cornish. Baker John instead makes his “improper pasties” after teaching himself to crimp the pastry, using local organic apples, raisins, onion and beef from the Summer Creek Farm ($7.50).

Blue Edge Bakery, 55 Burgess St, Bicheno

A big seller at the Blue Edge Bakery, the Cornish Pasty ($5.70) is worth the stop at Bicheno for a taste. The good size pasty is made in the tradition D-shape and is packed full of vegetables. Mixed in with locally-source beef, this Cornish pasty blends its fillings to precision with a well-crafted pastry holding it together.

Bush Bakery, 682 Leslie Rd, Leslie Vale

Rick Rook the pastry cook has been perfecting his art for more than 30 years. Together with his wife Julie and their five children, Rick prides himself on budget prices for quality food — and with a pack of four pasties for $13.50, you will not be left wanting.

Proper Pasties

Ask around for a good Cornish pasty and this name is sure to pop up. Native Cornishman Andrew Driscall brought his famous baking skills to Tasmania and continues to delight market-goers. There are sure to be fillings to suit all tastes, from the Original Traditional filled with skirt beef, swede, potato and onion, to the Moroccan roast vegetable pasty. Proper Pasties are available from the Huon Farmers Market and the Kingston Beach Handmade Market.

Cottage Bakery, 9 Victoria St, Scottsdale

This bakehouse in the state’s northeast is no stranger to awards for its delicious breads, sweet treats and house pastries. The “curly” is the traditional Cornish pasty with a distinctly Scottsdale twist. Baker Steven uses beef dripping to flavour the dough, before filling it with meat and various root vegetables ($4).
