Could Tasmania’s Stillwater Seven be home to Australia’s best minibar?

At this boutique luxury hotel in Launceston, guests complete an intriguing pre-arrival questionnaire, and upon check-in the reason becomes clear. Because the answers to those questions enable staff to ensure your personal pantry is stocked with your favourite drinks and snacks prior to arrival.

Be it Tasmanian whisky or vodka; a glass of Tamar sparkling wine or an Apple Isle ale.

Add fresh-baked bread with local butter and it’s the perfect entree to Launceston’s top gourmet stay with a minibar brimming with premium Tasmanian products.

Guests also get a choice of daily newspapers and coffee, just the way you like it – the attention to detail here is first rate.

The seven superbly-appointed hotel rooms are dark, quiet, moody and beautiful and feature kingsize beds, decadent bathrooms and river views.

The transformed 1830s flour mill, located at the mouth of Cataract Gorge, revels in all things Tassie-grown and crafted, particularly in restaurant Stillwater, where chef and co-owner Craig Will showcases ingredients like Lenah wallaby, Cape Grim beef and market veg.

He co-owns the business with husband and wife duo James and Bianca Welsh.
