WHEN the pandemic hit, business owner sisters Loren and Erin Clarke were at a crossroads deciding whether to strip back operations or expand.
They chose the latter and are now “nervously excited” about their first bricks and mortar Lady Hester doughnut and cake shop opening today.
A regular stallholder at the Hobart Farm Gate Market, the Lady Hester team has seen a business downturn following the market’s brief closure COVID closure and its reduction in food stalls.
“We never would have decided to open this store if there wasn’t a pandemic,” Loren said.
“It’s what gave us the push to open. We had gone down a lot in sales at the market and we had to decide whether to scale back or try something new.
“We’re quite scared and we’re starting small with just takeaways to begin, but people have been amazing and we’ve had a great following so we’re hopeful for the support.”
Alongside their signature doughnuts, the Lady Hester team will be serving up cakes, homemade bread and savouries including vegetable and meat sandwiches.
“We’re using a lot of recipes that our family and friends have developed over the years like my great-grandmother’s pastry dish as well as an old flatmate’s meatball recipe,” Loren said.
The new Lady Hester store at the former Art of Tea site, 52 Sandy Bay Rd, Battery Point and will operate Wednesday to Saturday, while the business’s Sunday market stall will remain.
