IT will be a pop-up party like no other.

Enjoy an evening of gourmet food, drinks and entertainment at the city's newest event.

Pop Will Eat Itself is the creation of Spotted Cow owner Phil Coorey and the idea is it will be the first of many events held at Toowoomba's iconic industrial site, The Mills Precinct.

It will kick off on Friday, May 27 from 4pm - 11.30pm.

There will be wine, beer, cocktails, champagne, mouth watering food stalls providing local produce, a dedicated pop-up espresso martini bar and a DJ set.

Mr Coorey said it would one of the best evening events Toowoomba had seen in a long time.

"It's going to be for the after-work crowd and something different for people to do on a Friday night," he said.

"It will be a cool, casual evening with fresh food and craft beer. The idea is for it to be really eclectic and not too overcrowded.

"The room will be filled with lovely mezzanine in a big open area with communal tables and music."

Mr Coorey said when he first saw the inside of the Mills Precinct he knew he could transform it into something amazing.

"I fell in love with the area and my brain started ticking over with ideas," he said.

"Not just one, I have so many ideas for the venue."

Following Pop Will Eat Itself, on Saturday, May 28, the Spotted Cow will host the First Coast Festival closing celebrations at the site.

There will be live music from Philadelphia Grand Jury, The Goon Sax, Hound, Star Club and DJ Bacon.

It will be supported by Stone and Wood Brewing as well as Treehouse Cider and food vendors will also be serving tasty treat from 7pm - 10pm.

Mr Coorey said it would be a huge two nights.

"First Coat is such an iconic unique event and it's an honour to be asked to curate the music side of things, especially at such a great venue," he said.
