Renovations have begun on the Finch Cafe and Pizzeria, which will move into the space formerly occupied by the cafe, Charred.
Co-owners Dan and Edwina Farquhar, who also operate The Finch cafe on Ruthven st, said the new site was a “good fit” with their brand.
“We felt there was a gap in the market for family friendly dining and we’ve been looking at a second site for a while,” Mr Farquhar said.
“We’d had our eye on a number of sites in East Toowoomba and Rangeville, on the eastern side of town, and this one was the best fit for what we were looking to do.”
While the new cafe takes inspiration from its predecessor, there will be a few different items on the menu.
“We’ll be offering wood-fired pizzas – the idea behind it is beautiful, hand-stretched pizzas and we have an Italian pizza chef joining us.” Mr Farquhar said.
“(We’re planning) to have the pizzeria operating Wednesday to Sunday night and then the Finch Cafe operating breakfast and lunch from Monday to Sunday.
“We’re renovating the dining area, the kitchen and the bar and we’re creating a pizza production space.
“There’s going to be 40 carparks associated with the (new venue), a handful out the front and then ample parking in behind the cafe.”
Mr Farquhar said although there was no set opening date, the pair planned to have the cafe up and running after Easter.
“There’s already a bit of a buzz around it, we’re just keen to hit the ground running as soon as we can,” he said.
“We’re still under dining restrictions in terms of capacity but from our perspective we’re really bullish, we believe there’s a vaccine about to be rolled out and hopefully this COVID business is almost in our rear view mirror.”
