AFTER months of uncertainty, the future of the famous Spotted Cow has been confirmed by the new owners.
Brisbane-based Hallmark Group has revealed its purchase of the beloved venue, and will renovate it before reopening.
The pub on the intersection of Ruthven and Campbell Sts in Toowoomba City had been owned by the Coorey family for several decades.
The outbreak of COVID-19 forced the venue's closure earlier this year, and it has remained shut since then.
Hallmark director Scott Hempel, who grew up on the Darling Downs, said he wanted to ensure any refurbishment matched the original's charm and appeal.
"The Spotted Cow renovation and reopening is an exciting project for Hallmark Group and myself," he said.
"Growing up in the Darling Downs, I certainly feel a strong local connection and appreciation for the venue's history and charm, which we look forward to honouring.
"The Spotted Cow has truly become an institution central to the local community - a place where guests can sink a schooner, yarn with a neighbour and feel that genuine sense of community the Darling Downs is known so well for."
Mr Hempel said food service would remain a focal point for the venue after it reopened.
"We will be celebrating this history and local reputation by continuing to provide the best classic pub eats, TAB gaming, live sport and entertainment in the Darling Downs region," he said.
"The friendly and warm hospitality service will remain a hero offering for The Spotted Cow, combined with a delicious modern menu.
"Our steak will be a star offering thanks to our new dry-age cabinet, where we'll be storing and dry-ageing our beef to maximise the consistency and intensity of flavours.
"We will also have an impressive floating wood fire grill."
The property was nearly sold to another group of investors earlier this year, but the deal was scuppered by the pandemic.
Prior to being known as the Spotted Cow in 1990, the site was originally licensed as a tannery in 1892 before it became the Sovereign Hotel and then the Luckona.
The venue is the latest acquisition by Hallmark Group, which owns several outlets in Brisbane and the Gold Coast including Lefty's Music Hall, Retro's Cocktail Lounge, Finn McCool's Irish Bar, the Asylum Nightclub and Jamie Oliver's Pizzeria.
