Restaurant project helps students whip up new skills

IT WAS showtime for a group of Toowoomba State High School students last night as they hosted their first restaurant-style dinner for family and friends.
The three-course meal was part of an assessment piece for the school's hospitality practices subject, which aims to impart industry skills.
One of the Year 12 students working hard behind the scenes yesterday was Max Pritchard.
"(The class) has been planning this dinner since October last year, and we've done heaps of trials on entrees, mains and desserts," Mr Pritchard said.
"I took this subject on a whim and have really fallen in love with it, I've dabbled in the kitchen with mum since I was nine.
"It's exhilarating now that it's finally happening - all of the preparations have been made for us to smash it out of the park tonight."
This is the first year the restaurant style dinners have been used as a form of assessment at the school, and it's thanks in part to new TSHS technology department head Simone Edbrooke.
"The students are working on three restaurant dinners over three weeks as part of the restaurant project," she said.
"They have been broken into teams; a drinks team, a food service team and a back of house team.
"The dinner is by invitation only and, because of COVID-19, we have had to halve the guest numbers."
Ms Edbrooke said the subject gave students a taste of working life in hospitality.
"They'll do all aspects of dining service, which will help them to decide if they want to study it further and make it a career path," she said.
