GELATISSIMO Toowoomba has mixed together passionfruit, mango, peach and a hint of lime to create a new gelato flavour in time for the Carnival of Flowers.
Some of the ingredients for the new flavour, called Pansy Passion, have been sourced from the local area, including the edible flowers mixed throughout.
"Every year, we try to come up with a different flavour," Gelatissimo Toowoomba manager Esther Wong said.
"We always discuss with our team what would make the best flavour, and we try to come up (with ideas) that fit spring time and summer time."
Ms Wong said this period was usually the busiest time of the year for the store.
"Unfortunately, in September there will be no TCOF parade," she said.
"But this year we are still hoping to see a lot of crowds coming in to look at the flowers, and we will see a lot of business for people in town."
Toowoomba Regional Council environment and community chair James O'Shea said it was wonderful to see local businesses embrace the carnival.
"TCOF, as we know, is all about flowers, but it's also all about flavour, so we've really had to call on our flavour makers to provide opportunities for people to come into the CBD," Cr O'Shea said.
"This is another great example of that."
