Inaugural Butcher and Chef Challenge brings creative results and innovative food

A new challenge which involves apprentice chefs and butchers working side-by-side to
produce creative results and innovative food has proven to be a huge success.
Regional training organisation Downs Hospitality and Training collaborated with World Butcher Committee co-ordinator Rob Ratalic to create the inaugural Chef and Butcher Challenge.
Six stage-two apprentice students worked together to in teams of two to cook meals and impress a panel of four judges.
The challenge was designed to build relationships between two traditional trades who had not previously worked together in a competition.
The idea was the transfer of skills and the extension of the knowledge between the two trades which would in-turn add value to the products.
The competition served to improve the working relationship between the two separate trades, strengthen the understanding between the theoretical training and the practical application, and to improve the skills and knowledge between them.
The winning team was Lachlan Jericho a chef from The Junk Restaurant and Vanessa Nolan a butcher at Gray’s Modern Meat Mart.
Their Asian inspired meals had the “wow factor” the judges were looking for on the day.
Downs Hospitality and Training manager Stephen Simon said the event was a huge success with plans to hold the competition again in the future
“We were excited to be at the forefront of this initiative for both industries and we look forward to conducting it again in 2021,” he said.
“From the teaching, learning and judging perspective this event has been an overriding success.”
