The owners of a new Toowoomba coffee shop Ash Lynch, 31, and Dan Knight, 31, first met when they worked together at Passiontree Velvet, but when the store unexpectedly closed, the pair missed working together and serving their customers.

Now, their four-year-long friendship has blossomed into a business partnership, with the pair set to open their new cafe In A Dash Coffee on Saturday.

“When it closed we were pretty sad and we missed working together, so we decided to do our own thing where we could make the decisions ourselves and bring the team back together,” Ms Lynch said.

“We have been so fortunate to have the support system we have had and there have been people here helping us almost every night and every weekend.”

Along with the help of their family and friends, the duo performed a major renovation on the store which was formerly the home of My Ability Cafe and a banh mi shop.

The seasonal menu will feature items ranging from crossaints and avo on toast, to cakes and slices.

“The relationship we formed with our regular customers from Passiontree will definitely help (set us a part),” Mr Knight said.

In A Dash Coffee is at 6 Duggan St and open Monday to Saturday, from 7.30am to 2.30pm.

To celebrate, there will be an official grand opening event at the store on Saturday.
