In a leap for the new owners, and a seachange for the old, the much-loved Gympie brunch cafe The Two of Us is changing hands.
As of Wednesday, March 22, Mariee Anne Moro, assisted by her husband, Lino, will be at the helm of the Tozer Street cafe while Trent Kirkwood, and his wife, Bec Edmonds begin their “seachange”.
“We want a bit of a seachange even though we’re smack bang in the middle of town,” Mr Kirkwood explained.
“I guess we like to challenge the status quo.”
The couple have battled the pandemic and floods over the past two years. It has not been easy, but it has been a worthwhile journey.
The floods were a “weird” highlight for Mr Kirkwood.
“Unfortunately, a lot of our competitors got knocked out, but the flipside of that was that we were busier than ever,” he said.
“We were just pumping out coffee and small food because our chef got flooded and stuck on the other side of town.”
New owner Mrs Moro is relieved the business is far clear of the flood zone.
She’s looking forward to being her own hospitality boss, as well as being closer to her husband of 19 years and her elderly mother.
While she contemplates her canvas of customers, she is thinking of introducing a retro look to the cafe with 70s snacks such as chocolate fudge, spiders, ice cream sodas, milkshakes and gelato.
“We're going to go for a bit of a retro look, and just jazz it up a little bit and make it our own cool,” Mrs Moro said.
“I want to go old school when you had your chocolate crackles and chocolate fudge, back to the 70s and 80s.”
Mr Kirkwood had a twinge of nostalgia when it came to selling the business he and Ms Edmonds poured their creativity and character into, but he said he was looking forward to his next venture, Lemon and Limes.
This will showcase Gympie as a region of food, nature, and beauty.
“We want to showcase the best of the Gympie region. We're going to do a photo blog, take a buttload of photos and show off what’s the best in the area,” he said.
This weekend (March 18-19) is their last time serving customers at The Two of Us before they hand the keys over to the Moros.
Mr Kirkwood already has his final social media post planned. It will be of the Looney Tunes, “That’s all folks” ending with the couple’s faces superimposed on it.
“We're just gonna do coffee on Sunday, that way we can actually stop and smell the roses and say goodbye to our customers,” he said.
