The owners of Hinkler Central’s Ginza Cuisine have expanded to Bundaberg Central, with their new store Kuriya Sushi Bar offering an evening service.

Sushi lovers of Bundaberg with a hankering for salmon nigiri or a California roll of an evening have been out of luck, with most sushi train restaurants focusing on the lunch service and closing by 5pm.
But now all has changed with the new owners of Kuriya Sushi Bar (formerly Bundy Sushi) extending the Bundaberg Central store’s opening hours to provide an evening service.
Owner Yunnie Lee wants customers to have ample opportunity to enjoy good, fresh food at an affordable price.
“We don’t want customers to spend so much on food because it’s a very hard time for the customer,” Ms Lee said.
“Our core values are for customers to enjoy fresh, good food and fast service for the least amount possible.”

Owner of Hinkler Central’s Ginza Cuisine, Ms Lee leapt at the chance to take over Bundy Sushi when she heard the owners were selling.
“We were also thinking about expanding our business,” she said.
“And because the store already had a sushi train, we didn’t need to do any renovations.”
She has taken on three new staff, with seven other staff from the Hinkler Central store filling in when required.
While her own costs have increased due to the cost of living crisis, Ms Lee said staff working across both stores enabled her to keep prices low.
“We treat (staff) like family, so everyone is happy to work with us,” she said.
“Because our staff are working more, that means we can put more food on the train at a lower price.”
The head chef at both stores, Jun Lam, said he was trained by a Japanese sushi master in Tokyo before working for more than 20 years as a sushi chef in Singapore, Sydney and Melbourne.
Mr Lam’s philosophy is to provide fresh sushi with simple, clean flavours and textures.
“In my experience, a sushi train doesn’t need to try to be too classy – a simple meal is good for everyone,” Mr Lam said.
“The most important thing is to get all the sushi out for the customer quickly so it’s as fresh as possible.”
Mr Lam said he was working on a set dinner menu with a range of proteins such as teriyaki salmon served with rice, salad and miso soup.

Ms Lee said she was in the process of applying for a liquor licence for BYO.

Opening hours are 11am to 7.30pm Monday to Saturday, and 11am to 2pm Sundays (kitchen closed 2 – 4.30pm).
