4 Brothers Brewing setting up brew-pub at Margaret St site in Toowoomba CBD move

A longstanding local brewing company is planning to move to the Toowoomba CBD this year with a new pub.

Adrian Cubit can see Margaret St in the Toowoomba CBD is starting to buzz again, and he wants to be a part of it.

The owner of 4 Brothers Brewing has secured the location for his new pub, The Brewhouse, which will be based out of the old Charcoal Chicken site next to Jilly’s Cafe.

The pub is the latest business to join what used to be known as “Eat Street” in the city centre, and comes just after wine bar the Cork and Lever opened a few doors down.

It will also sit almost directly opposite the newly-opened Carnival Lane, which links Margaret St to the Walton Stores and extra parking.

Mr Cubit, who previously ran his brewing company and pub out of the old milk factory on Brook St, said the move came at the right time considering the amount of public and private investment into Margaret St.

“When you look at the business thriving on Margaret St, a lot of them are in the late night economy,” he said.

“We would more than likely have some live music, but one of the main features is the space has a wide street frontage, which suits street dining.

“If we can sort it out with the council, we can have 40 people out the front there.

“There’s not really that much street dining on the street, (so) I think that is one feature that I’m excited about.”

Mr Cubit said the venue would feature a full commercial kitchen and also include the 4 Brothers brewing operation, offering both the company’s own creations and other drinks.

“The Brewhouse will be where we brew our beer, so it’s a brew-pub,” he said.

“We’ll be producing our own beers and ciders and we’ll have a full commercial kitchen.

“Basically, the idea for our menu is bar food, which goes well with beer.

“I should be smaller plates, maybe you can put some together for a platter.

“We’re hoping to get the after work beers crowd — that would pair very well with the Cork and Lever, which is only two doors down.

“If people want to continue their night from there, there are other venues, so it’s a companion to what’s already there.”

Mr Cubit said he hoped to have the brew-pub open by early March, depending on the availability of contractors.
