TASCH Egger has always wanted to own her own cafe.
It's a dream that she nurtured through her time managing what was once one of Brisbane's favourite breakfast spots - Au Cirque - and the idea only grew after moving to Toowoomba four years ago.
So for her and partner Clemence Demouzon to have now opened Burrow, a cafe in Bridge St, Mount Lofty, it still feels a little surreal.
The proud owners of Toowoomba's newest eatery couldn't be more excited.
"It seems like it's something I've waited for all my life, and it's finally here now. We love it. it's exactly what we wanted it to be," Ms Egger said.
Burrow currently offers an all-day breakfast menu, the produce for which Ms Egger has tried to source locally wherever possible.
Open for just over a week now, Ms Egger said two menu items - the garlic-rubbed sourdough with smoked blistered tomato, charred onion, whipped feta, herb oil and black sesame; and the ricotta doughnuts with berry sauce, treacle mascarpone, and pistachio ginger crumb - had emerged as firm favourites among hungry patrons.
With a little bit of tweaking, she also hopes to introduce a number of lunch items to the menu in the coming weeks.
The cafe has done a roaring trade since it opened on August 4.
Burrow can be found at 117a Bridge St, and is currently open Tuesday to Friday from 7am to 3pm, and weekends from 7am to 2.30pm.
