20 minutes and your left with this? Why wouldn’t you give this recipe a go tonight?

MONDAY

Go on and give meat-free Monday a go with this marinated tofu, noodle, mushroom combination. Tofu is gluten-free and a great source of protein, iron and calcium, just make sure you pick up the medium to firm kind to ensure it doesn’t disintegrate among your noodles. Udon noodle salad with Teriyaki tofu, looks fancy but is super simple to make and should only take you about 20 minutes.

TUESDAY

If you can’t get a leg, use a shoulder or boned and rolled loin of lamb instead.

Need an iron boost? Why not get a little bit fancy this week and give Poh’s butterfly lamb leg with anchovy cream a crack? Pair with Poh’s zucchini and bean side or a simple summer salad while the weather’s still warm.

The new meat and three veg is a modern take on the stodgy bangers, mash and veggies you ate as a kid. This contemporary style recipe is essentially a bunch of unique and delicious ingredients thrown together in the simplest way. Never thought you’d enjoy zucchini flowers if they weren’t stuffed with cheese? Well, partnered with fresh fennel, orange segments and salty slices of bresaola you’d be hard pressed not to.

THURSDAY

A hearty, healthy dish that takes no time to throw together.

Braised lentils with cumin-spiced chicken is so quick, easy and healthy that after you make the dish once it will be on your weekly rotation for weeks. The spiced chicken on a bed of moreish braised lentils makes this hearty meal the perfect way to use up those vegetables you forgot about in crisper — don’t lie, we’ve all discovered a yellow broccolini.

FRIDAY

More than just a great way to use leftover bread.

The humble Lebanese fattoush salad is never going out of style, fresh flavours and herbs, bitey radish and that familiar sprinkling of sumac makes this dish the perfect weeknight recipe. Plus, it’s an excuse to eat bread and still tell everyone you’re just having a salad.

SATURDAY

Make this the week you make your own dumplings, it’s easier than it looks.

Thought you could only indulge in dumplings if somebody else was making them? Yeah, me too. However, we were both wrong. These prawn and ginger dumplings are so simple to make, and very impressive to serve to guests. All you need to invest in is a large bamboo steamer (I suggest large because you’ll be wanting to make a lot of these). Happy Chinese New Year!

This lentil and celery stew is perfect for Sundays. It’s easy to make, packed full of veggies and legumes, uses only one pot and serves six. So if you’re just cooking for yourself, don’t even think about inviting anyone else round because your weekly meal prep is done, friend!
