MONDAY

Are you one of those people who could easily eat pasta five times a week? Nope, just me? Well if you are and don’t want to admit, I’m telling you that now you can, by replacing the pasta with zoodles, a light, healthy zucchini alternative. Jacqueline Alwill’s mushroom pasta with zucchini noodles has all those Italian flavours you love but won’t leave you feeling weighed down, you know, if you do choose to eat it five times this week.

Moroccan beef brochettes with pearl couscous salad is a simple yet hearty weeknight dinner that will easily feed the whole family. Why so simple? Because cooking anything on a skewer generally is. Pack the couscous full of fresh herbs and ripe tomatoes, that are absolutely blooming this time of year, and you’ll be making this dish as often as possible.

WEDNESDAY

Watermelon chicken salad. That’s right, watermelon and chicken in a salad. No, don’t scroll past! When you taste this beautiful summer dish, boasting the perfect blend of sweet and salty flavours, you’ll want to hunt down some watermelon in the dead of winter because it’s just that damn tasty. But rather than doing that, just cook it on Wednesday (yes technically Autumn, but pretend you thought it was a leap year).

Marinated lamb chops are a token weeknight meal to be hoed into by the entire family. So easy to pack full of flavour this handheld dinner of sorts goes with veggies and sweet potato mash or your choice of salad.

FRIDAY

Apple cider vinegar is the health ingredient of the moment, and you can do more with it than just put it on your face (yep, people do that). Apple cider vinegar salmon with watermelon salsa is the perfect dish to wrap up what has been a very long summer. Cook these skewers up on the BBQ and enjoy outside while the weather’s still warm.
