Oncore by Clare Smyth finally given Sydney opening date
In perhaps the most anticipated restaurant opening of the year, Crown Sydney will play host to Oncore by Clare Smyth, which finally has a launch date.
Sydney’s shoreline is about to get a little more delicious, with Oncore by Clare Smyth set to open in July 2021.
Announced today, the three-Michelin star chef has revealed the sister restaurant to Core in London will be opening in Sydney’s Crown complex, located in the ever-growing hub of Barangaroo.
Set on the 26th floor of the hotel, which has already made a splash with the opening of Nobu Sydney, a’Mare and Silks, Oncore by Clare Smyth will become a must-try destination for both locals and visitors to Sydney, with Smyth’s famed take on locally sourced fine dining earning her three Michelin stars in Europe — the only female chef to hold the honour.
With a modest 68 seats, the restaurant will take in views over the harbour and is expected to continue Smyth’s tradition of heroing local, fresh produce. The restaurant will be run by Head Chef Alan Stuart, who has been tasked with the day-to-day operations of Oncore.
Stuart has been working alongside Smyth at Core in London in preparation for the role, and cites culinary institutions Eleven Madison Park and chefs like Gordon Ramsay as past employers. Both Smyth and Stuart will be working with Australia’s top producers to stock the restaurant.
Crown’s six star hotel made quite a splash upon its arrival in Sydney, proving a favourite for celebrities and tastemakers alike. Lingering questions around the future of the casino didn’t seem to deter fans, who have flocked to the Barangaroo site en masse.
The hotel takes glittering luxury to a whole new level, with tonnes of European marble making the minimum $850-a-night spend seem like chump change. Add to that a ritzy infinity pool and more premium restaurants than one could try in a stay, and it’s quite a destination.
Oncore by Clare Smyth is slated to open in July.
