Bentley Group to launch Brasserie 1930 at Capella Sydney hotel

Brent Savage and Nick Hildebrandt are lending their talents to Sydney’s most anticipated hotel restaurant of 2023.

The Bentley Group has partnered with Capella Sydney to bring the hotel’s new restaurant to life.

Brasserie 1930, which will launch in March 2023 to coincide with the opening of the new CBD hotel, will focus on Australian, small batch produce and “age-old techniques such as curing, smoking, fermenting, preserving and pickling.”

Brent Savage and Nick Hildebrandt will work with the restaurant’s executive chef, Gabriele Taddeucci and head chef, Niroshan Richards on its menu and wine offering, which will include selected local and international drops from The Bentley Wine Vault.

“We are really excited to be partnering with Capella to open Brasserie 1930,” Savage said. “The heritage dining room is one of the most beautiful we’ve seen, and our intention is to create a Sydney institution. The menu will hero brasserie classics done our way.”

The historic Department of Education building on Sydney’s Bridge Street is the site of the Capella Hotel Group’s first Australian hotel, which will be taking reservations from December 2022.

The 192-room property will include two other dining offerings on its ground floor, including McRae Bar, named after the 108-year-old building’s architect George McRae who also designed Sydney’s QVB and Central Railway Station.

The sixth floor will house the hotel’s wellness space, which includes a 20-metre heated indoor pool, steam room, sauna, gym and Auriga Spa treatment rooms.

The refurbishment was undertaken by Make Architects and Singapore developer Pontiac Land Group, which won a tender for a 99-year lease of the NSW Government owned, heritage-listed site in 2015.

Capella Sydney is the latest opening for the hotel group, which currently operates in Vietnam, Indonesia, Singapore, Thailand and China.

The company is also expanding into Saudi Arabia, South Korea, Japan and the Maldives over the next three years.
