Brett Graham, who was born in Newcastle, has achieved the most prestigious culinary accolade for his renowned London restaurant, The Ledbury.
Three Michelin stars must have been a dream come true?
Brilliant news for me and the team. Tom, the head chef, and Jack, the general manager, were a big part of it, so to be there together [at the Manchester ceremony earlier this year] was a special moment.
What do you splurge on?
Mammoth fossils and plaster casts.
Design luminary you would still like to meet?
Italian sculptor Domenico Brucciani if he was still alive.

Building you’d love to call home?
Sir John Soane’s Museum in London’s Lincoln’s Inn Fields, which transports you back to Regency-era London, taking you through architect Sir John Soane’s [1753-1837] extraordinary home and world-class collection of art, architectural fragments, books, drawings and furniture.
Wellness pursuit you are most keen to try?
Sleep.

Anything at Hide restaurant by Ollie Dabbous in Green Park.

The one cold tinnie we drink after service at the end of the week.

I only work on my phone, so tech is lost on me.
Where is your happy place?
Richmond Park. And I would like to spend more time in the French countryside.
What do you wish you knew 20 years ago?
How important both culture and hospitality would be in my life.
