It’s something unusual for dinner. Would you eat it?
What is it?
Something different for supper: choice cuts of Bennetts wallaby, wild-harvested in Tasmania.
Such a cute animal! Is it tasty too? It’s the “pinot noir of red meats”, according to Lenah, a small firm established in 1993.
First impressions: The ruby-red slabs of meat are small and very lean: simple, careful cooking is called for. Sear in a hot pan, and cook medium rare; rest, then slice across the grain.
And? It’s sensational: tender, succulent, with a beautiful flavour. It tastes like an animal that has grazed in the wild all its life. Don’t bother with fancy sauces; sea salt is all it needs.
Verdict: A fine way to bring a little adventure to supper time. Once you’ve got your head around eating wallaby, Lenah also sells possum meat. But that’s probably taking things too far.
