Guillaume Brahimi closing his Paddington restaurant
Guillaume Brahimi, Australian’s best known French chef, will close his eponymous Sydney restaurant after three years.
Another of Australia’s high end restaurants has called it a day.
French expat Guillaume Brahimi will close the doors of his Paddington fine diner on December 30.
The announcement comes in the wake of closures earlier this year of Marque and Silvereye, both premium dining experiences.
Brahimi opened the restaurant just three years ago in an opulently restored Paddington Terrace after making the decision to quit the Opera house site that had been his fine dining home for 10 years.
The chef says he will concentrate on his three bistros around the country, his Paddington hotel the four in Hand, and other consultancies with Crown.
In a statement this morning Brahimi said the lease was about to expire and he had decided not to extend.
“While I have loved the last three years ... in Paddington and it has been a difficult decision not to take up for that option period, I am happy with my decision to focus all my energy into my bistros around the country.”
Brahimi had previously operated Guillaume at Bennelong, the fine-dining restaurant at the Sydney Opera House, for 12 years.
He lost that tender in 2013 when the Opera House Trust chose to give the site a more down-market makeover.
