Honey joys meet rocky road.William Meppem

There’s no better way to get kids involved in Christmas lunch than getting them to make these. Think of them as a cross between honey joys and rocky road.

Ingredients

  • 3 cups cornflakes

  • ¼ cup dried cranberries

  • 2 tbsp diced dried apricots

  • ¼ cup green glace cherries, diced

  • ¼ cup white chocolate bits or baking chips

  • ¼ cup halved macadamia nuts

  • 110g butter

  • ¼ cup caster sugar

  • 2 tbsp golden syrup

  • pinch of salt

Method

  1. Step 1

    Heat your oven to 160C fan-forced (180C conventional). Combine the cornflakes, dried cranberries, dried apricots, glace cherries, white chocolate bits and macadamia nuts in a large bowl, then mix to combine. Place 12 cupcake liners into a muffin tin.

  2. Step 2

    Combine the butter, caster sugar, golden syrup and salt in a small saucepan over a low heat, stirring to melt the butter and dissolve the sugar and salt. Pour the butter mixture over the cornflake mixture and combine. Spoon the combined mixture into the cupcake liners and bake for 10 minutes. Cool on a wire rack.
