Serves: 4
Ingredients:
- 400g Al Bronzo Penne Rigate
- 30 ml extra virgin olive oil
- ~10 anchovy fillets in oil
- 1 clove garlic, sliced
- 50g pitted Taggiasca or Kalamata olives
- 30g capers in salt (rinsed and chopped)
- 500g of peeled tomatoes or fresh cherry tomatoes
- 20g chopped parsley
- Chilli and salt to taste
Method:
- Fry the garlic in a pan with the olive oil and chilli to taste, until fragrant and lightly fried.
- Then add the capers and anchovy fillets and cook for 2 minutes more.
- Turn up the heat and add the peeled tomatoes. If necessary, add salt to taste and continue cooking on a high heat for around 5 minutes, mixing every so often, and adding the olives.
- In the meantime, cook the pasta in boiling salted water according to package instructions.
- Once al dente, drain and combine with the sauce.
- Serve with a sprinkle of chopped parsley to garnish.
