Grilled prawns with a rum glaze

There’s nothing quite like an Aussie Christmas, celebrated in the warmth of the summer. And what better way to celebrate the season than with a dish that embodies the essence of Australian cuisine: grilled prawns, glazed to perfection with a rich, caramelised rum sauce.

As the sun dips below the horizon, painting the sky with hues of orange and pink, the smell of grilled prawns wafts through the air, inviting friends and family to relax, unwind and savour the simple pleasures of life.

These rum-glazed grilled prawns are the perfect centrepiece for your festive feast. Succulent, juicy prawns are marinated in a zesty blend of spices and herbs, then grilled to perfection. The crowning glory is a luscious rum glaze, caramelised to a golden brown, that elevates the dish to new heights

Serves: 4 to 6 people

Ingredients:

● 700g prawns, peeled and deveined
● 1 green onion, thinly sliced, for garnish
● 2 cloves garlic, minced
● ¼ cup The Kraken Spiced Rum
● ¼ cup soy sauce
● ⅓ cup sweet chili sauce
● ½ tsp chilli flakes
● Juice of 1 lime
● 3 tbsp olive oil, divided

Method:

  1. Peel and devein the prawns and place in a large bowl.
  2. Chop the green onion and set aside to use for garnish.
  3. Chop and mince the garlic, to be used in the marinade.
  4. In a medium bowl, whisk together the rum, soy sauce, sweet chilli sauce, garlic, chilli flakes, lime juice and 2 tbsp of the olive oil.
  5. Add three-quarters of the marinade to the bowl of prawns and let marinate in the refrigerator for 15 to 30 minutes.
  6. Heat the remaining 1 tbsp oil in a large pan or grill pan over medium-high heat.
  7. Add prawns and cook on one side until golden, about 2 minutes.
  8. Using tongs, flip prawns, then brush with remaining marinade.
  9. Cook 1 to 2 minutes more.
  10. Garnish with green onions.
