Husband and wife team Billy Huynh and Trinh Vi Nguyen always wanted to open their own Vietnamese restaurant in Australia, and now that dream has become a reality.
“We’ve wanted to open a restaurant for a very long time,” Mr Huynh, who has worked as a chef for more than a decade, said.
“I’ve wanted to bring people to Vietnam without needing to buy a plane ticket.”
After nearly four years in Darwin, the couple will finally turn their dream into a reality, with the grand opening of their new restaurant, called Hidden Saigon in Berrimah, on Monday, January 13.
Located at 2/10 Mel Rd, Berrimah, Hidden Saigon in Berrimah will offer a number of Territory favourites including Laksa, Pho noodles, Vietnamese rolls and more.
The restaurant, which serves only breakfast and lunch, will operate from 7am to 2.30pm, Monday to Friday, with plans to extend its service times in the future.
“If we can get enough people buying from here then we’ll happily open for dinner and maybe even weekends,” Ms Nguyen said.
The selling point for the restaurant, Ms Nguyen said, was the affordable prices.
“We know people are doing it tough at the moment, so why would we charge a high amount?,” she said.
“We’ve kept most of food around the $17, $18 price point.
“A 20 per cent discount will be applied to all meals for our opening week, too.”
Ms Nguyen, who goes by Trinny, became a mother seven weeks ago and said she and her husband operated out of love.
“We do all of this out of love, not for the money,” she said.
“I’m on maternity leave but I still want to help out my husband as much as I can.”
“We love Darwin and we’d like to settle down here; the people here are so friendly and it has such a great small town vibe you don’t get anywhere else in Australia.”
Mr Huynh said he could not wait to open the restaurant’s doors.
“I’m so keen,” he said.
“A lot of people say they’re coming; so I hope we can live up to expectations.”
