Chinese dumplings, spiral spuds, cannoli and gluten free donuts were among some of the hot contenders for Townsville’s 2023 Best Food Truck.
However, it was Wood Fire Pizza Townsville that came out on top as the city’s favourite food truck, much to Kylie Colwell and Craig Jenkin’s delight.
“It’s awesome, a bit of recognition for all the hard work and something for the staff too,” Mr Jenkins said.
“A big thank you to everyone who voted and the local support, which is amazing.”
Amongst the staff, wood suppliers, business coach and social media manager, Mr Jenkins says the business has a lot of cogs in the wheel and involves around 30 people.
“It’s one big team,” he said.
“Without them and their dedication, we wouldn’t be where we are today.”
But Mr Jenkins says nothing would get done without Mrs Colwell.
“Without Kylie, nothing would happen. She looks after all the bookings, and rostering and I order the equipment and do the cooking.”
Often set up beside the sporting field, the rodeo ring or an outdoor wedding, Wood Fire Pizza Townsville attribute much of their success to their locally sourced produce and gluten-free bases as well as the fact they can bring their oven to you.
The mobile, two-oven trailer weighs approximately 1200kg and once lit, a pizza takes about two minutes to cook, allowing Mr Jenkins to travel to events all over the region and cater to crowds.
The events are Mr Jenkins’s favourite thing about the job with plans to attend next year’s Country Fest in Bloomsbury and the North Queensland Elite Rodeo.
