Pub on Palmer offering classic pub fare menu including parmigianas
Would you try a parmigiana with peanut butter, maple bacon and cheese? The Pub on Palmer’s kitchen has opened, with a new menu including 10 unique parmigianas.

The newly named and renovated Pub on Palmer has opened up its kitchen with a menu aimed at classic and wholesome pub food, but the main feature on its menu are 10 different topped up parmigianas loaded with unique combinations.
With the kitchen opening low-key and with little fanfare less than a week ago, the most popular parmigiana have been ‘The Cowboy’, loaded with ham, cheese, salami and bacon, as well as the ‘Far-Ken-Hot’, which promises “burns going in and coming out” with ingredients spicy sambal, house napoli, hot salami, red capsicum and jalapenos.
Sample dishes such as the Cowboy and pub staples thai beef salad, and bangers and mash, were generously loaded on the plate, while loaded with flavour.
While a thick parmigiana base is at risk of being dry and overcooked, The Cowboy was succulent, juicy and crisp, and a lover of parmies was sure to be drawn back to try out other unique and challenging flavours.
Other combinations certain to draw eyebrows includes The King, involving maple bacon, cheese and peanut butter, and the Dirty Birdie, which offers garlic prawns, bacon, avocado and hollandaise.
The menu was chosen by Star Group’s executive chief who was inspired by experiences in other venues he had worked at, but seemed to be particularly drawn to maple syrup as a flavour.
The newly renovated Star Group’s Pub On Palmer was formerly known as the Shamrock, and has been open in its current form for two months.
Venue manager Linda Moyle said the kitchen staff were still working together as a unit under head chef Joel Rowbottom, and developing their relationships which once established would allow them to be bolder with their chef specials.
But they also would be consulting with their patrons to work out how the menu could be modified.
“The original vibe of the past venue was the parmies were definitely the go to for the venue, so we’ve sort of stuck with that theme, keeping with the heritage of it and having it as a parmy house,” Ms Moyle said.
“So maintaining the fact we’re a classics favourites pub, it’s nothing exuberant, it’s nothing fancy, we’ve got the Palmer Collective, and we’ve got Rydges next door, you’ve got the Metropole further down that can do those kind of styles.
“We’re going for your wholesome pub favourites.”
Ms Moyle was also aiming to development a pub culture that embraced old-school hospitality that welcomed patrons, but she was also considering technology that could speed up the ordering process and help attract the CBD officer to eat on their lunch breaks.
The kitchen hours range from 11.30am to 2.30pm for lunch, and 5pm to 9pm for dinner every day, but the venue manager was hoping to reach the point of expanding those hours on weekends.
Pub on Palmer is located at 31 Palmer St, South Townsville. Open 10am to late.
