Celebrated Tasmanian distillery Callington Mill has embarked on the next step in their journey to world whisky domination, opening a new destination in the heart of Hobart.
General manager Rizk Mawass said it had always been a goal to open a venue in the city’s tourist hub.
“One day we are going to have a whiskey experience in Singapore or Shanghai,” he said.
“This is our test to see how things will go not just to be a whisky brand, but a whisky destination.”
The waterfront venue seats 190 people across two indoor spaces, with its incoming food menu driven by Japanese-inspired “accuracy, standards and precision,” Mr Mawass said.
The drinks menu will feature a selection of whiskies, wines, and cocktails, including the Godfather – the venue’s signature cocktail made with amaretto, Callington single malt whisky, and infused with smoked oak shavings from their own whisky casks.
Patrons will also be able to partake in the “Serendipity Experience”, allowing them to create their own signature bottles of whisky.
“It’s a very intense, personalised experience,” Mr Mawass said.
“We always have loved the fact that all things is done in our home, and you can see how make whisky start to finish.”
The new venue at Macq01 will marks its official opening with a private event on Thursday.
From then on, it will be open seven days a week from 12pm.
Callington Mill was established by Founder John Ibrahim and brothers Salim and Danny Nicolas in 2017.
It opened its distillery and cellar door in 2020, with the new venue its first city outpost.
