Jeff and Rosie Nyugen set to open Banh Mi Express in Alice Springs, eight different banh mi’s on menu

The Red Centre capital will soon have eight different kinds of delicious banh mi’s to munch on, when two Vietnamese expats open their first offering in town. Find out more.

Eight different kinds of hot, fresh banh mi’s are going to be available in the Red Centre capital, once two Vietnamese expats clear the final hurdles required to open their first hospo offering in Alice Springs.

Jeff and Rosie Nyugen are the brains behind Banh Mi Express, set to open in February, once three phase power is properly connected to their store, they say.

Hailing from Da Nang and Ho Chi Minh, Vietnam, the duo have been in Alice Springs for four years, with Bahn Mi Express their first business venture.

Their shopfront, located on Gregory Tce, opposite the town’s council chambers, is all fitted out with the right gear ready to go – including a modern rotary oven.

Eight kinds of “traditional Vietnamese” banh mi’s – including a vegetarian option – will be on offer, as well as pho, spring rolls, baos buns, Vietnamese coffee, and more.

“We got a Vietnamese combo, because in the morning Vietnamese people just grab a bahn mi and coffee and they start,” Mr Nyugen said.

The couple plan to be open 8am-5pm every day “because Vietnamese people are hard working” they said with a smile – but the hours are subject to change, depending how their opening weeks go.

“We will see how busy it is and how customer feedback is for us, like if they still want pho or one banh mi for night time,” Mr Nyugen said.

“So maybe we’ll open a bit later, like 5pm to 7pm.”

They also plan to partner with Uber Eats, DoorDash, and Menulog for deliveries.

Mr Nyugen said to keep an eye on their Facebook page, where they will announce the opening date in the coming weeks.
