Naturally, we’re always on the lookout for fresh twists on potato salad.

The best egg and potato salad hack revealed

Taste recipe and video content creator Stella Morelli decided to test out adding grated egg to potato salad. 

Adding grated eggs to toast and sandwiches has been all over TikTok, with Australian Best Recipes also sharing their grated egg hack. 

So Stella decided to ask, what about potato salad? 

“The idea came from just seeing grated egg hacks on socials. Most of the time, it was being used for sandwiches, but we wanted to come up with a different way to use this trick,” she says.  

The hack involves finely grating a hard-boiled egg onto your potato salad ingredients, adding your oil dressing and then tossing it through.

The result? Potato salad with no big, eggy chunks and a mayo-free dressing that’s high in protein.

Why should you use grated egg in a potato salad?

“It makes the salad creamy without having to add a mayo or cream-based dressing,” says Stella.
“It distributes the egg evenly across the salad, which also means you don’t need that many boiled eggs. 

“We’ve used four, but could have probably done with just two or three for one kilo of potatoes.”

How to grate an egg

If you’re like me, the thought of grating anything sounds messy, but don’t let that scare you.

This hack involves less mess (and effort) than you would think, thanks to the firm texture of a hard-boiled egg. Warning: don’t try it with soft-boiled ones!

You can use any grater, but we found it worked best with a Microplane. You could also use a cheese rotary grater.

Simply hold your egg and grater over a bowl and grate – it’s that easy! 

The egg white will fall into fine, parmesan-like grated pieces, while the egg yolk will be more of a crumbly texture that’s perfect for mixing through your potato salad.

OK, now to the important bit: how does it taste? 

Taste deputy content director Jade Dunn and senior content and social video producer Marina Karris tried it out. 

Spoiler alert: it’s delicious. 

“I like that the egg is all the way through the potato salad and you can see little bits of egg yolk,” says Jade.

“The egg isn’t overwhelming, it’s a little bit creamy and if you don’t like big chunks of egg in your potato salad then I think this is a really good way to get even distribution of delicious flavour.” 

Marina agrees, saying that grating the egg gives you “really good, even distribution of the egg” and “really works”.

“You don’t get those chunks of eggs, it’s just creamy throughout. I really like that,” she says.

Classic potato salad recipe (with the best creamy dressing)

This classic potato salad is a game-changer. This recipe uses mayonnaise and a bit of vinegar too, to give it a bit of acidity. 

The key players in this salad are fried bacon and crispy onions, gherkins and waxy nicola potatoes. Grated egg would definitely work in this salad too.

Traditional potato salad 

This is a lower-fat option using champagne ham and fat-free mayonnaise that’s still full of flavour. 

Combine lemon juice, red onion, fat-free mayonnaise and salt to make your dressing. Mix it through your cooked desiree potatoes while they’re still warm to help the potatoes absorb the flavour. 

To finish, toss through your golden fried ham and basil. 

Creamy potato salad with herbs

This simple potato salad still has plenty of flavour thanks to a generous mix of fresh mint, parsley, dill and garlic.

Combine together with sour cream, mayonnaise, mustard and lemon juice, seasoning with salt and pepper. 

Mix your dressing through your cooked potatoes and finely chopped green shallots.
