A POPULAR Darwin fisho will be urging his fellow Territorians to “eat the fish, the whole fish, and nothing but the fish” this weekend.
One half of ABC Radio’s Tales From The Tinny crew, Rob Smith will this weekend teach people some handy recipes on how best to use the whole fish – including guts, heads, wings and racks.
Mr Smith said with fish stocks in the Territory diminishing, it was stupid to waste perfectly edible parts of local, wild caught fish.
“We have got fish stocks diminishing and everyone is running short of money … why don’t we use some of this stuff?” Mr Smith said. “This is prime, wild-caught organic food and we’re just keeping the fillets and throwing the rest of it away.
“It’s really time to make some delicious stuff from these offcuts.”
Mr Smith said along with the offcuts, he would be using fish heads, wings, frames and “all sorts of things”.
“Maybe a bit of skin, maybe a float bladder, and there will be a few other surprises in there too.
“We are going to be utilising the whole fish.”
Mr Smith said the use of off cuts or giblets was common throughout other parts of the world, and it was time for a change in our mindsets, and be open to eating different cuts.
“I remember as a kid we used to fry the frames, but we were a lot more in tune in how to use everything back then.
“Now we take prime cuts and chuck the rest of it away, and that’s something we’ve got to turn around.
“The Japanese love whale, and we think it’s gross. We eat beef, and the Hindus think that’s ridiculous as well.
“Asians eat grasshoppers, and we think that’s gross – it’s all a mindset thing.”
He said the show would help people make their money stretch further.
“Instead of having one good meal of fillets, we can stretch that into two or three meals out of a good-sized fish, and they will still be tasty.
“People may be deluded into thinking that I’m going to be baking a whole red emperor or something, but that’s not the case.”
