Bleeding good sashimi

This trevally was bleeding so much when I landed him.

I pitied him but I didn’t want to waste the fish.

That’s the reason I killed him, while feeling sorry.

I wanted to repay his death so it would not be in vain.

Sashimi with salsa is a good way to eat small trevally.

INGREDIENTS AND METHOD

Raw trevally fillet, thinly sliced.

Season with one teaspoon salt, one teaspoon sugar, black pepper, basil and rosemary.

The seasonings may be sprinkled on top of the raw slices.

Cool these slices in the refrigerator for an hour.

Remove from the refrigerator, and wash and dry quickly.

Mix one tablespoon white wine with two tablespoons wine vinegar.

Pickle the trevally slices in a plastic bag for 15-30 minutes with the white wine and wine vinegar mix.

SALSA

Combine tomato, green capsicum, onion and garlic, chopped; lemon, sliced; salt;

Tabasco and extra-virgin olive oil.

Arrange the pickled slices on a plate and add the salsa.
