Seta Ratucadre did not appear in Blacktown Local Court on Tuesday after spending a week behind bars on remand.
Court documents reveal the 36-year-old has been charged with four fresh offences related to his alleged knife-wielding crime spree on January 15.
Police claim the Belmore resident threatened to kill his former girlfriend over the phone before he approached her at the fast food restaurant in the early hours of January 15.
He allegedly pulled out a weapon and stabbed the woman at the McDonald’s on the Great Western Highway near Minchinbury.
The 36-year-old woman sustained injuries to her hands and was taken to hospital in a stable condition.
Mr Ratucadre is also charged with intimidating his ex-partner with the intention of causing her fear of physical harm on the same night.
The woman was allegedly under the protection of an apprehended violence order at the time she was wounded.
On Tuesday, court documents unveiled four fresh allegations of knife crime during the same 10-minute period in the first hour of the morning.
Police claim Mr Ratucadre robbed a person of their mobile phone, purse, car keys and even the car itself while brandishing a 15cm blade.
He allegedly assaulted the owner of a red Mitsubishi Lancer in order to take the vehicle and drive it without their permission.
The 36-year-old is also charged with illegally driving the car while a person was inside.
Police claim he drove the red sedan in Minchinbury even though he knew he was disqualified from holding a driver’s licence.
He had been charged with the offence after allegedly driving while disqualified in Panania on December 20 last year.
Mr Ratucadre was arrested at his Riverstone home the following day after a police investigation into the circumstances surrounding the bloody evening.
Initially, the 36-year-old was charged with using a carriage service to threaten to kill, stalking/intimidation intended to cause fear of physical harm, wounding a person intending to cause grievous bodily harm (DV), and contravene prohibition/restriction in AVO (DV).
On Tuesday, he was hit with the fresh charges of robbery armed with an offensive weapon, aggravated take/drive car with person in it, and aggravated assault with intent to take/drive a car.
Mr Ratucadre also faces two charges of driving while disqualified.
The court heard he would not apply for bail. He will return to court on March 23.
