THE Sydney publicist has undergone a dramatic fitness transformation over the past year. Now she’s shared the day-on-a-plate that has helped her lose 12kg in 12 months.

SYDNEY publicist Roxy Jacenko has revealed what she eats during a regular day, after losing 12kg in 12 months following her shock cancer diagnosis last year.

The 37-year-old has been sharing her intense fitness transformation with her 187,000 Instagram followers.

She regularly posts videos of herself working out with her personal trainer as well as selfies in her designer activewear outfits.

When she was diagnosed with breast cancer last August, Jacenko was told by doctors to start exercising regularly and overhaul her diet.

Now she’s revealed exactly how disciplined she has been to achieve and maintain that 12kg weight loss.

“I start my day with a skim piccolo and one slice of vegemite toast. I don’t snack between breakfast and lunch,” Jacenko told Husskie.

“For lunch, I have kingfish sashimi x 6 pieces and 6 x cooked tuna mini rolls. I’ll snack on a mandarin and then have dinner, which more often than not is a repeat of lunch plus a glass or three of Viognier — white wine.

“Weekends are hard as the kids love nuggets and chips for Saturday evening dinner — resisting eating while we prepare them is TORTURE!”

She avoids “anything fattening” in order to manage her weight.

“Having lost 12kg in the past 12 months, I am very focused on maintaining my weight and it really comes down to diet. It’s been a big part of my regimen since being diagnosed with cancer.

“I only started because when I began radiation therapy, I needed to strengthen my bones! Now I am well and truly hooked on training — the results help keep up my motivation … and summer!!”

But Jacenko has unhealthy vices like the rest of us.

“I am HOOKED on milk chocolate bullets and raisins, I could eat a bag in one sitting! Killer pythons are also a guilty pleasure.”

Jacenko, who is mother to Pixie, 5, and Hunter, 3, says she has not received any professional nutrition advice.

“I don’t get advice and I am sure if I did I would be told I don’t have a balanced diet, but for now, what I am doing is working for me. I am in the best health and shape I have been for a long time,” she said.

According to the Australian Dietary Guidelines, we should consume five serves of vegetables and two serves of fruit in a day.

Jacenko recently announced on Instagram that she and husband Oliver Curtis were going to renew their vows in a second wedding, after initially getting married in 2012.

Curtis was released from jail last month on a good behaviour bond after serving a 12 month sentence for conspiracy to commit insider trading.
