Mum recreates famous Strawberry Watermelon Cake using Coles sponge
The “most Instagrammable cake” usually has a big price tag - but an Aussie mum has recreated it using an item Coles that costs $5.
There’s a reason this iconic Aussie cake has been dubbed the “most Instagrammable cake in the world” by The New York Times.
Its sheer beauty, delicate look and layers of sweet goodness is just part of the reason for this cake’s global success.
And now an Aussie mum has shared her secret in recreating the Strawberry Watermelon cake made famous by Black Star Pastry in Sydney.

The original cake costs anywhere between $36 for four serves or $330 for a large cake that feeds 45, but if you’re feeling experimental, you can create your own version for as little as $5 – as this mum did.
The mother-of-three revealed she used Coles’ $5 rectangular sponge cake to help create the popular dessert.
“I made it and ate it the same day and it wasn’t soggy. There were no leftovers to test if it were to go soggy or not if left overnight,” she posted on Facebook.
Many commented on her replica describing it as “fantastic” and “amazing” adding that it was almost identical to the original creation.
The sought-after cake is made with layers of rose-scented cream, almond dacquoise, watermelon and topped with chopped strawberries, pistachios and dried rose petals.
The ingredients combined “represent the flavours of romance” with one million slices sold every year.
For her version, the mum softened the watermelon in rosewater then dried the fruit in a paper towel to prevent it from turning soggy from excess water.
Some were unaware of the cake’s popularity with one woman saying she ordered the “real thing and it’s so good”.
“(I) would love to be able to replicate it,” she added.
“I had to look twice because I thought the topping was tomato, onion and seasoning. Looks yummy with the fruit,” another wrote.
